Auberge eaufeu is a 12-room gastronomic auberge in Kanagaso, Komatsu City, Ishikawa Prefecture — a quiet satoyama village recognized as part of a Japan Heritage site. The building was once the local elementary school, closed due to depopulation, and reopened in 2022 as an auberge that blends nostalgic architecture with contemporary art and cuisine.

The Chef

Executive Chef Shota Itoi leads the kitchen at eaufeu. Born in Kyoto in 1992, he trained in France — including at the three-Michelin-starred Auberge de l'Ill in Alsace — before returning to Japan. In 2018, at age 26, he won the Grand Prix ("RED EGG") at RED U-35, Japan's largest competition for chefs under 35, becoming the youngest champion in the competition's history. He has since been named to Forbes Asia's "30 Under 30 Asia" and received recognition from Gault&Millau and La Liste. His cuisine draws freely on the ingredients of Kaga and the Hokuriku region, shaped by an inventive, boundary-crossing sensibility.
